Everyone has a personal favorite, mostly due to how much of each period faction they have or when they started. That being said, I have my own favorite:
10066
http://guide.lugnet.com/set/10066

I believe that we'll eventually see another like this after the 2007 sets have gathered strength.

Probably will include:
1 Gray Crossbow
2 Flails (sweet)
2 Sickles (oh yeah!)
2 Gray Spears (I'd prefer brown)
2 Short Swords
2 Gray Lances
2 Black Short Flag Holder Thingys
1 Oblong Skull Shield
1 Circle Skull Shield
1 Oblong Crown Shield
1 Triangular Crown Shield
1 Gray Helmets Neck Protector
1 Gray Archer Style Helmet with with Chin-Guard
1 Gray Knight Helmet with Fixed Face Grill
2 Black Vladek Style Helmets
1 Gold? Crown
1 Black Wizard Hat
1 Gray? Beard
1 Gold Flag
1 Dark Blue Flag
2 Fire pieces

and I dunno what else, they usually come with plumes but it looks like 2007 won't be seeing any plumes.

My choice was mainly due to a use-ability vs cast aside ratio of the parts contained in it. No cast offs (for me) in 5184, 10066 is another of my favs (and slightly underrated) but there are still 9 elements in there I just don't want duplicates of, about 25% of the pack... that's a lot to put in a separate bin. That said I'd still take quite a few of these off you for a decent price ; )

This thread has been split from the 5138 Weekly Set Review. If you want to discuss another set, use it's WSR thread. If you want to discuss which parts you would like to see in a new pack, post it in Dear LEGO.

I would have to say the same thing as you, but replace the chin guard helmet with a knights visor (it does not look like there is any in the 2007 sets, unless you mean this: http://media.peeron.com/ldraw/images/47/3x/527.png . The two fire pieces could be replaced with two lightning pieces also. Probably change the grey helmets with chrome silver (I think thats the new color).

One of those skeletal horses would be nice too, but that's probably just wishful thinking.

I'll have to say I wouldn't mind having that back, but I think they should have a new weapon pack and like hoarse pack in the new Castle sets.

They had a horse pack once. A weapon pack would be nice.
EDIT: Strange quote...

They (LEGO) should make a kind of "Ultimate Castle Accessory" pack. With parts from EVERY era of Castle. Now that would be awesome, but we'd be lucky if such a thing would happen.

They would be crazy expensive though... I would buy a lot of them though. If it came out when Castle was out, I would just through Castle aside and buy those packs.
