such a difficult question, I just like so many and it keeps changing all the time.
Almost every castle set (I mean which is more then 100 parts) had at least one nice minifig. Those are just a tip of the iceburg:

Favourite fig: The black knight from the namesake set. Has everything a fig needs.
Most useful: Qui-gon. Not exactly castle, but the head is versatile, the hair can be painted and still look good, and the torso, who can honestly say they don't have a peasant with that torso?

Me! I don't have any peasants (that doesn't mean that my kingdom has none, just that I haven't made any). That doesn't mean that I don't use Qui-gon torsos: they make great desert tribal raiders!
