Since they did a Forestman and a couple of other homage figures in earlier sets, I just assumed the Evil Knight had a blank torso because it was an homage to the Evil Knight in the Royal Castle set. That guy had a blank torso and similar breastplate, black trimmed in gold. His helmet is pretty much the same design, too.

My Evil Knight's shield has a bright enough boar -- it looks pretty cool. Also got an Inca Warrior and a Viking (I have a soft spot for minifigures with bladed weapons!), Little Red Riding Hood (makes a great peasant child), and a Monkey Boy, mainly for his torso and two knives.

I think they did a great job with this set -- looking forward to seeing the next batch!

Just curious, are you guys and gals treating the "evil knight" as a specific character/individual or a generic soldier?

I'm kinda thinking that he's some kind of evil lord. He looks the part, especially if you give him a black cape.

The Black knight looks pretty good if you sit him on the Ringwraiths horse from LOTR they both have the red eyes and silver decorations.

I've been struggling to integrate the armor and legs into other figs, and the legs really don't go well with anything but that particular armor. I did make a group of figs using just the breastplates though, and I'm planning on posting a pic of them (along with the rest of my Garhim forces) by the end of the week.

I noticed yesterday after randomly searching "Lego Knight" on Google. that the Evil Knight's "Angry Boar" is striking close the the Black Knight from Monty Python fame.

I did this:

a few weeks back. I'm not too keen on the original face (it works a lot better as an evil wizard or demon type IMO) so I switched it with a bunch of gladiator faces I had leftover from another MOC.

The legs are quite detailed so look a bit odd without the breastplate. A printed torso would have given more flexibility in using these parts for other troops I think.
