The plates are really simple, you just put these:
Underneath the plates then build around/over the tops of the plates to cover gaps. The How-To page has an excellent article on it: http://www.classic-castle.com/howto/articles/landscapehowto.html the section on angled plates in landscapes is a little past halfway through the article. The whole thing is worth reading though, there are many great tips/techniques in the How-To page
