Does somebody have a link to some un-official directions for a caslte I can build with about 200 2x4 grey bricks?

The Classic-Castle.com How-To area's "Creation" section has some good articles to get you started:

The Bricks on the Brain "Building Instructions Portal" has some fan-created castle instructions:

Also, searching Brickshelf for "Castle" will turn up a lot of ideas. Many castle builders take enough pictures that you should be able to figure out exactly how they built their castle. Even an Internet search of "LEGO castle" will turn up a lot of them.
Ultimately, though, you're going to have to rely on your own imagination and creativity, as Nathan said.
