Oops, I'm really embarrassed that I let this drop for so long.
Perhaps fittingly, the first true Classic-Castle Cool Link is Lugnet. While a lot of the AFOL conversation has shifted to theme-specific sites in the past couple of years, Lugnet is THE general site that gave birth to all of these others. Eight years of archives are a great resource to find great MOCs and developments in the LEGO community. Lugnet also has an extensive current set guide.
What should be the next Classic-Castle Cool Link? Here are your candidates:
Brickshelf gallery by Onishi Shinji - Castle content: cool castle and monster creations by Onishi Shinji
Neutronbot - Castle content: Six builders, including CC Admins Lenny and Kevin and forum member Jonesy, came together to make this site. While much of the site is space themed, those three builders have extensive castle and fantasy creations.
Brickmania - Castle content: Dan Siskind developed a series of great MOCs to sell as customs sets. His Blacksmith Shop was so good that LEGO turned it into the first MOC set. He no longer sells custom sets, but follow the "bazaar" and "gallery" links to see his models.
Steinwerk, Jojo's MyImages gallery and Jojo's Brickshelf gallery - Castle content: This link is actually three links, since Jojo's work is spread over three sites. Forum member Johannes Koehler has created an impressive series of MOCs, largely castle-themed. Click around and be amazed. Also on his Steinwerk site, follow the Rittersets link for a set guide (German language).
Bricklink - Castle content: This is a general community site that allows individuals to sell LEGO elements. This resource gives us all the power to get the pieces we need to complete our projects.

This was a tough choice... I have a feeling all of these will eventually become "Link of the Weeks"... they are some of the great builders I've seen and checked out over the years~
In the end, I too went for Jojo... maybe some bias included there, but his MOCs and creations are also some of the most inspiring I've taken a look at.

THE COOLEST LEGO-related castle site has to be LEGO Castles by Bob Carney.
The rest are nice or useful but Carney's castles are awe-inspiring IMHO.

Many sites are already considered CCCL sites, as if you'll remember when the CCCL was created, Bruce incorporated Castley links from the Lugnet Cool Sites of the Week. Thus, for example, you'll never see Ikros in a poll for CCCL because I was a Cool Lugnet Site of the week in... 2001 maybe?

As Tony pointed out, I went through the old CLSOTW archives and pulled out anything with castle content or general utility and labeled them honorary CCCL sites. The idea was that we could already start out with a list of existing sites that the community had chosen, and this would allow us to highlight new things, rather than spend the next two years agreeing that, yes, Bob Carney, Takeshi Itou, etc etc are all great sites. So go ahead and check out the archives for a decade's worth of great castle content.

BTW, I've always loved your site, both for the MOCs and for the layout. My only complaint is that at first it is easy to miss the "more people", "more things", "more places", "more castles" buttons, so a quick perusal might miss 75% of the site content. Perhaps a bigger graphical button would make it clearer, in addition to the text link. For instance, on this page, if there was a big button saying "click here for more" above the black line, centered under the two MOC photos, I'm sure more people would go on to see the other 6 castles you present.

When I started the site, I didn't think of it as just a list of all my projects. I've designed it as a place where the visitor can explore and find new things.
