I just ran across this page which has pics and info about several nice castles from all over the world. Not just the usual European ones, but also middle-eastern, Asian, and even some castle-inspired buildings in North America.

I'm not really a fan of that list. It's far too broad, featuring many buildings that are more like playhouses than actual castles. None of the entries in Canada for example should be considered IMO. If we're talking about buildings that are inspired by castles or look like castles, then why not the Disney castles, or the Excalibur in Vegas? This list is far too broad at the expense of some very real and very impressive castles. The Asian, Middle Eastern and European castles are certainly worthy of consideration, but I don't think anything in a place like Canada should be considered.
