You speak as if that idea was over and done with, but since they've replaced 6193 with this set: http://www.bricklink.com/catalogItem.asp?S=5929-1, I don't think that it's a dead concept. I actually found 6193 quite useful for replenishing a lot of my basic bricks and thought it was quite a cute little set. If they produce similar sets in the future, something about the size of the Creator log cabin, or the lighthouse would be really handy. But to get back on the topic, I agree with your original post that the castle theme is not unloved. I think that many of the new sets seen for the past several years reflect the feedback directly from this corner of the room.
