Here's Francis of Assisi for the realistic castle figure category
I guess everyone has heard of the founder of the franciscan order who happens to be a very sympathetic figure (at least to me ).
As he is the patron saint of the animals in the catholic church, he's often represented with them, notably with birds, a wolf (was planning to grab a warg for that but did not get the occasion) and a lamb.
