I think it's as easy to do that when you build the building first. And you use less bricks for landscaping, because you can see where you need bricks and where you don't

Ah, but what if, say, you want to build a canyon beside the castle. How are you going to do it if it is already built on a base?

The canyon is never going to be under the castle I assume.
So, if you have your castle on plates (so, no plates sticking out), you can put the castle on a construction to lift it, and build the scenery around that construction. I never build a building on the baseplate, but maybe I was assuming everyone was building that way

Everyone has his favourite way of building, of course, and there is no fixed rule to it.
But speaking for myself I would say:
Decide what kind of castle you want to want to build, the location in the scenery, and how big it will be. Start building your landscape roughly. Work from the lowest point of your landscape (because of the nature of the LEGO-bricks) en go on to the highest point. Put in enough supports so that it not collapse during building. Build your castle – without a base plate - on top of the hill (assuming that this is the right location.) After that, finish your landscape and put in al the wanted details.
Personally, I prefer to make some drawings before building. A plan and some sections will be very helpful. But that is not everyone’s cup of tea..
I hope it will be some helpful to you. It is certainly not the only way. It depends also what you want to do with it. Or if you want it to be movable, or modular. And how big (or heavy) will it be. This all has to be taken into consideration.
