I hate AoE since its the most irrealistic an historically inacurate game ever. I would go for cossacks, and of course, the upcoming Medieval Total War II

You're pretty much a medieval/fantasy thief/ assasin. You have missions to steal valuable or sacred things, there factions that hire you, you can pick which faction you want to ally with, or ally with both, and the story leads deeper and deeper.Hmm... I don't think I've played that one , I should give it a try. Oh, by the way, what's it about?
But the greatest feeling are knocking out a torch with a water arrow while a guard has his back turned and blackjacking or knifing him while he's not watching, or perhaps arrowing him, then seeing your prize in front of you.
Some think it's a little cold, but it's like a medieval splinter cell type thing. It is very hard to explain. Anyone else wanna fill in gaps I may have missed? I'm not to good a describer
I ow it to wunztwice for directing me here.

Most of the good ones have been mentioned, but if you're a Ninja fan, Throne Of Darkness is a good hacknslash RPG. Also, the first trio of Prince of Persia games are brilliant for Arabian/Eastern stuff. The Ubisoft trilogy is good, but not in the same way...it was more like LOTR than Arabian Nights.

I just got Stronhold and Stronghold Crusader, and both are fun. Also, they are much more realistic, because you have to make people to make armor and swords, and food and wood. Also, the trees grow back, and you must deal with moral of you people, etc. It is much more accurate then most games that I have played, and yet they have still managed to make it very fun.
