I will add to my post as well; I also like to change heads, because i simply must make my soldiers look as unique as can, so i try to buy every type of lego head that fits the era available. I like to play around with torsos, heads, headgear and weapons to create clearly distinguished 12-man companies and one sergeant for each.
In the case of Crown knights, a lot of Bricklinking was needed to eliminate most of the light gray from the colour scheme (hips&legs for all, also arms and helmets for knights). I used some of the Viking torsos, too, which blend very well with the Crown ones.
I am currently working on a new 30 man-at-arms company, and i am using one of the Crown knight torso designs for them... only problem is i need to change the color scheme from blue to red to fit my kingdom's red and yellow theme. Time to Bricklink!
